Which pizza do you enjoy more? Biga or Poolish? 😊 or direct? Personally haven’t tried biga yet.. but I prefer direct 😅 poolish has more flavor but I get full too fast can’t enjoy too much 😅

Hi Julian, do you find making a Pizza with BiGA leaves the crust soft and not crispy after a few minutes when done cooking ? As suppose to making a Pizza direct method and receiving a crispy crust when left out after a few minutes as well ? These both cooked at a same temperature to note
