Rava or Sooji or Suji or Semolina is used in making variety of dishes from monotonous upma to yummy kesari. When Rava kesari is served in a marriage with lots and lots of ghee and roasted cashews, our eyes starts to twinkle and hands will pounce on it and mouth will gobble it and tummy will fall in love with it. All of this happens before the person sitting next u is served 😉. That's the magic of rava kesari..

Its very simple dish. In south India, as soon as a guest comes home without any announcement (which usually happens all over the world), within 5 mins of their arrival, yummy, tasty, delicious rava kesari will be prepared with hot bhajjiya and filter coffee. That's it. The guests tummy will fall in love with the magical hands of the cook.

But everything takes practice, correct measurements of the ingredients, knowing the tactics, and mainly passion. Likewise making rava kesari may sound easy and simple.. (What? Stop boasting for making rava kesari! is a common statement) But even that kesari needs attention to get the perfect texture.

Trust me, if water is less they will not be sticky but equally will not be cooked. If water is more, then it will stick in ur mouth and u can't open ur mouth.. Don't worry, I have explained the best method to overcome this problem.

Ingredients:
Basic:
Rava/ Sooji (unroasted) - 100-150 grams
(for approx. 2 to 3 people)

Additional:
Sugar (granulated) – 100 – 150 grams (equal to the rava quantity)
Cardamom powder- 1 teaspoon
Raw camphor or pachai karpooram - A small pich

Boiling water - 500 ml (or as per required)

For roasting:
Ghee – 1½ tablespoons for roasting the cashews and raisins. 3 to 4 tablespoons for roasting the rava. 2 to 3 tablespoons at the end.
(Important: No refined oil or butter or any other oil varieties.. Only Ghee, ghee & ghee)

For garnishing:
Cashews- 10 in Nos.
Raisins- 5 in Nos. (optional)
Pistachios- 6 in Nos. (optional)
Almonds – 4 in Nos. (optional)

For colouring:
Orange or yellow colour – A pinch
(Note: Avoid food colouring)
Natural colours:
Saffron (Kesar) – A pinch (soak in warm water (2 tablespoons) for 5 mins) (or)
Rose syrup – 1 tablespoon (or)
Pineapple essence – 1 tablespoon
Turmeric - A pinch (might change the taste a bit but better than food colour)

Extra tip: Cleaning cloth for keeping the kitchen clean on the go 😊
