Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house

Vincenzo, I have a request. I'm half Sicilian, and want to get back to my roots, so I've been trying Italian recipes I've never had before. Would you consider a series of videos of traditional foods eaten for each holiday? Plus the recipes, of course. It would be fun and very helpful. Blessings to you and your family!!

Yessss! Vini. It was really hard to choose between gnocchi and clams. In the end I'll take the clams too Vini. What a rough life we Italians have choosing all of this fantastic food! LOL.

I have to say, although a lot of pastas are available in the Netherlands, the actual recipes are not that common, at all! Simplicity with sauce in a jar, and usually on top (yes, really), it surely opened my eyes to see how much is possible, and how much the dish is improved by simply changing the recipe to properly include the sauce. Thank you!

I've seen some of my favorites passing by and here is my Top 5:
5 - Tagliatelle Carbonara
4 - Spaghetti Bolognese (Ragu)
3 - Penne all'Arrabiata
2 - Linguine alle Vongole
1 - Spaghetti Aglio Olio e Peperoncino 🤤
The carbonara and ragu, those I've made better thanks to your video's, so thanks for that and keep up your video's on how to make the best Italian dishes...

I really love the Pasta al Limone recipe. At home we usually cook some dish very close to it. It is basically the same but the mint is replaced by fried zucchini. That is very delicious, too.

True Italian, fully dedicated to the traditional ways of preparing genuine Pasta dishes - wonderful presented as well - not boring people with excesses of cutting veggies and other pre-preparations - BIG thumbs up" My friends in Toscana prepared Spaghetti with raw, uncooked roughly cut Cherry Tomatoes, crushed Pinoli and a heap of fresh Garden Basil just tossed together - a summer nights dream of flavor! 🤩👍💪

I must say I am a pasta lover and could eat it for breakfast lunch or dinner. Of course my Dr.. would have a cow since I can't have a lot of starchy food. I will just have to make smaller portions.. I am hooked on how you cook and I can't get enough of your videos.. I have to say for 60 yrs I was never able to eat red sauce because of all the other ingredients that was put in the cans of tomato and sauce.. Watching your video on how to make homemade sauce has kept me in my kitchen for days making and storing for later... Again . Thank you for all the wonderful recipes.. Keep them coming.

A couple of years ago an Italian national showed me how to make Spaghetti al Limone, which I hadn't heard of. His version used panna da cucina, which I guess is basically cream. That seemed fine at the time, but I am very glad to see your version here without cream. I'll be trying it as soon as lemons are in season.

Vincenzo, this video made me so hungry and I could´nt even tell you which one of your recepies I preferre. They all look stunning. However, thre are some pasta dishes that use fried breadcrumbs, which I´ve never attempted. Maybe you would consider introducing them to us?🤩

I knew right from the start pasta alle vongole was going to take the cake 😂 Vincenzo, I don't think i've mentioned it before but the music you pick for your videos perfectly complements the goodness of your recipes 👌🏽 the way that carbonara dish spun to the sounds of italian opéra was glorious !!

1 - penne arrabbiata, 2 - spaghetti carbonara, 3 - Tortellini with browned butter and sage, 4 - Spaghetti bolognese, 5 - gnocchi with tomato and basil sauce 👍😋

I'll try the lemon pasta. I made up a recipe with mini farfalle, diced chicken, 'ceci' peas, toasted pine nuts, capers, artichoke hearts, some garlic, black pepper, dried oregano, olive oil, parmesan cheese, and a lotta lemon. I'll try the fresh mint sometime. My lemony pasta dish is more on the oily side, too. I often sprinkle the cheese on top after it's ready rather than stirring it in.

Salmon, Al Limone, creamy mushrooms, pomodori, broccoli. Gennaro taught me the joy of cooking. I‘m not from Italy but I want those dishes authentic. Italian cuisine is so fresh, healthy, simple and delicious that way.
