I feel like the simple answer is that Thanos, having killed the Eternals on Titan, ensured all the Eternals on Earth were dusted when he used the Infinity Gauntlet. In the comic (spoiler for a really old comic, I guess...), Sersi is even on panel disappearing in front of Captain America
