Yellow curry or “gaeng garee” is a classic and an absolute crowd pleaser, even for those who cannot tolerate much heat.

Those with sharp eyes may have noticed that I added something unusual into the curry. That is chopped rhubarb! My friend Byron and Alana gave me a giant bagful of frozen chopped rhubard from their garden.

I asked Byron, “what should I do with all this rhubarb??” He said, “It’s sour, so try using it where you normally use tamarind.” Wow. Brilliant. Yellow curry has a little tamarind added so the acid balances the richness, and I was out of tamarind, so rhubarb to the rescue.

By the time the curry was done the rhubarb had disintegrated into the sauce. It was perfect.

I love that you mention the Muslim community in Thailand. As a western Muslim I don't usually think of there being many Muslims in Thailand, Malaysia and Indonesia yes but we don't hear about Thai Muslims. Thank you for telling us about their contribution to Thai cuisine

That’s the 1st curry my mom cooked for me, followed by Korma. I cooked the same for my son too. 😊 Nice tip for making crispy shallots crisp again when it’s raining ☔️ like it’s already Autumn in Europe 🤦🏻‍♀️
