Something else you should know is the salt also kills off possible parasites in the meat. Despite that you should always cook any fish meat very throughly I’ve seen monsters inside me so I know what kind of damage parasites can do some even more devastating then others.

omg i used to go there to pick up the best tasting smoked salmon end bits pack and i find they were more fatty and flavorful than the full fillets, , they sadly do not have them anymore or not always in stock, , i used to get them for so cheap at a food basic that i knew carried them i think they were like 5 or 6 bucks for 550grams
