Greek Cabbage Salad

Welcome back to Episode 22 of All Things Greek! Today we are making Lahanosalata. Lahano for Cabbage and Salata, for Salad.

This Greek Cabbage Salad is the perfect side dish. Think of it as a Greek coleslaw. It’s full of flavor from the herbs, and of course, the addition of olives. Add it to a sandwich, or burger, or eat it on its own, you’ll want to devour this up.

Make this in 10 minutes with just 11 ingredients! Here’s all you need!

Ingredients:

1 small-medium green cabbage, shredded (about 6-8 cups shredded)
1 tsp salt
1/2 tsp pepper
1/4 cup finely chopped black olives
1/4 cup finely chopped green olives
6 green onions, chopped thin
1/2 cup crumbled feta cheese
1/3 cup chopped fresh dill
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp dried oregano (optional)
Instructions:

To a large bowl add the shredded cabbage and sprinkle over the salt. Use your hands to massage the cabbage with the salt for a few minutes - this helps to just slightly soften the cabbage.
To the cabbage add all of the remaining ingredients (pepper, olives, feta, dill, olive oil, red wine vinegar and dried oregano) and toss well. Serve and enjoy!
