Healthy Veggie Power Bowl for Beginners

Healthy Veggie Power Bowl for lunch or dinner.

Prep Time: 20 mins
Cooking Time: 30 mins
Servings: 4

Ingredients:
Roasted Veggies:
• 1 large sweet potato, peeled and chopped (2 cups)
• 2 cups brussels sprouts, trimmed and halved
• 1 large red bell pepper, seeded and chopped
• Extra virgin olive oil
• 1/2 lemon
• Salt and pepper to taste

Quinoa:
• 1 cup uncooked
Fresh Veggies:
• 1 small English cucumber, chopped
• 1 small bunch green onions, chopped
• 1 cup grape tomatoes, halved

Toppings:
• Chopped greens of your choosing (kale, romaine, mixed, etc)
• Avocado, sliced
• Nuts and seeds (I use hemp hearts and sunflower seeds)
• Hummus or pesto

Instructions:
1. Preheat your oven to 400° and line 2 large baking sheets with parchment paper.
2. Prep all of your roasted veggies (sweet potato, brussels sprouts, red bell pepper).
3. Place are the veggies that will be roasted neatly on both baking sheets, and drizzle your olive oil over top (make sure the veggies are well coated) and sprinkle generously with salt and pepper.
4. Roast your veggies for 35 mins until fork tender and golden.
5. While the veggies are roasting, add your quinoa to a pot, with 2 cups of water. Stir and bring to a simmer of medium-high heat. Cover with a lid, and let cook for 12-14 minutes, or until the water is absorbed and the quinoa is fluffy.
6. While the quinoa cooks, it’s time to prep your fresh veggies (cucumber, green onions, grape tomatoes), and set aside.
7. Remove your roasted veggies from the oven.
8. Time to build your Power Bowl! Grab a bowl, and add two generous handfuls of your greens of choice. Drizzle some olive oil and squeeze the juice of 1/4 of a lemon over your greens. Mix well. Add your quinoa and roasted veggies first. Then, to top it off, add your avocado, cucumber, and a sprinkle of nuts and seeds of your choosing.

Optional: Add a dollop of hummus or pesto

I had a bowl of veg (potatoes, broccoli and cauliflower) and mixed beans with added salt. It was alright. Got one more meal of it left.

I want to try this...I never had quinoa

This looks delicious but is there something I can substitute for quinoa? Don’t really like it.
