I have so many of these in my backyard. I've liked wilderness survival since I was a little kid, and all I can see in my backyard is a banquet. Burdock, like mentioned here, dandelions, plantain, wild onions, black raspberrys, wild grapes, and even wild carrots, i have spotted back there.

Korean here and we love burdock root! We stir fry them in sesame oil and a bit of soy sauce, delicious!

Burdock can be roasted and ground up into "coffee". Add to boiling water just like coffee.
Dandelion and/or chicory can be also ground (and roasted) and added for more flavor.
There are health benefits as well.

I live in Japan and shredded/sliced burdock root with carrot is a super common appetizer type dish. In Japan it's called Gobo and it's really common to be served as an Otoshi (basically appetizer/drinking food) when you sit down at a Japanese bar/izakaya for drinks it's common to get this or some sliced cabbage. Really delicious and especially good with sesame oil.

Burdock root is a common root crop in some Asian countries. Don't know if the species are different though.

Oh my gosh, i grew up eating this as a Korean side dish and in kimbap!

It's growing all over my property and i never connected the two. I'm gonna start harvesting it now. This is so neat to find it it's been available right under my nose!

Love Dock! Has a lemony flavor to me. I like mixing it with lambs quarters and sautéing it in bacon grease. Yum yum!

Very tasty in Japanese food. Earthy, satisfying texture and flavor.
One story goes that during WWII, US GI’s were fed burdock root by Japanese captors. Later in hearings after the war, a Japanese commander who had done so was charged with cruelty to the US captives for feeding them “tree branches”, actually burdock root which grows quite long in Japanese varieties.
