Love this recipe. I usually switch out the cream for a combination of creme fraiche and creme bonjour (flavor depending on the fillings)

You can use baking paper or parchment, or even tin foil, instead of the cling film. Or just use clean weights or dried beans without a lining.

Γειά σου Ακι!!! Είμαι η Μαρία Φωτεινάτου και ζω στην Κόστα Ρίκα. Ειθελα να σε συγχαρώ γιατί είσαι καταπληκτικός Cheff!!! Ότι κάνεις το κάνεις με αγάπη και αυτό είναι το καλύτερο υλικό!!! Εγώ εδώ σε ένα μήνα θα ανοίξω ένα ελληνικό εστιατόριο. Το όνομα είναι Άξιος. Και θα έχουμε πολλές από τις συνταγές σου. Την τυρόπιτα, σπανακόπιτα, μουσακά, ... Γι'αυτό θέλω να σε ευχαριστήσω πάρα πολύ!!! Έτσι και έρθεις στην Κόστα Ρίκα θα έχουμε την πόρτα μας ανοιχτή και θέλουμε να μας επισκεφθείς!!! Πολλά φιλιά από την Κόστα Ρίκα!!!

I have a question, but first know I sincerely enjoy your programs, and I always share with friends, especially non-greek friends - they all think highly of you! Now my question: when you baked the crust the first time you weighed it down by wrapping plastic around beans and placed it with plastic wrap in oven....what kind of plastic wrap did you use to bake? Thank you for your answer in advance - one of your super fans!
