I make great almond milk about once a week thanks to this video.
5 hours is enough soaking time for naturally sweet almond milk. Avoid allowing fermentation.
Do not blend the mixture past a slightly warm point. 38 degrees Celsius or 100 degrees Fahrenheit. This is a good point to stop blending.
Judging by touch, during blending if you can feel warmth on the Vitamix vessel but it is not too hot to keep touching, that is when you can stop blending the mixture.
You want to avoid actually cooking the liquid. Otherwise the resulting almond milk's texture will be a bit slimy.
You can improve the texture of the almond milk if you replace one cup of water with a 1.5 cups of ice. This will allow you to blend longer before reaching the 100 Degrees Fahrenheit limit.
Warning: If you soak the almonds more than 6 hours at room temperature fermentation will begin. The result will be a sour almond milk.
The intensity of the sourness will be stronger the longer the almonds soak.
Warning: Do not let the mixture stand. Squeeze out the mixture immediately. Otherwise the mixture will ferment rather quickly.
If you allow fermentation, the milk's shelf life will dramatically shorter. It will become undrinkable in as little as 3 days. Even when refrigerated immediately after processing.
Made properly and immediately refrigerated, I have had almond milk remain good for as long as 10 days.

That insta-regret after popping almond pulp into his mouth was hilarious. Felt so bad for him while he spent the next 2 minutes trying to discreetly get that taste off of his tongue. I remember being a kid and tasting a big spoon of cocoa powder-sure it would taste just like chocolate!

My Grandkids love my Almond milk/banana/blueberry smoothies. I add medjool dates and Vanilla extract and a pinch of salt. I blend the mixture and put it in the fridge overnight and it thickens to a delicious, thick creamy dessert, like a milkshake. They love it. You can drink it right away but I prefer a thicker consistency.

Why are people saying he’s a bad host? She’s the expert and she’s doing so much talking - what would you have done as the host, just talk over top of her?? He’s doing great by letting her teach us the steps. As he said, he didn’t want to interrupt her flow!

Geez...how harsh can people be? Not nice. Anyway....I am wondering how to dehydrate all those ground up almonds so I can use it. I have a dehydrator but the screens have holes in them and the ground up almonds will surely fall through. LOVE THE ALMOND I MADE WITH MY NEW A3500 Vitamix!

I would wash my bag by hand instead of putting it with other dirty towels, or whatever. Plus I don't want it to smell like fresh meadows, Ha! Cashew milk, too! You don't even know if there are almonds in the store bought version, at least not many. The Vitamix, also helps the it get creamy. I love mine. Try adding both together to make your store bought even better.

It’s good to have almonds stored in Mylar bags to do milk during times when you can’t get almond milk at the store. I Have almonds in my prepper pantry for emergency milk
