Mass and energy can be converted into one another using the formula E=mc^2, so the mass was converted into the energy of the photons.

As for your 2nd question, the particle may be rare but the field is always there (but, from what I gather, it's far more difficult to detect the field than it is to create and detect a particle). Like they said, the particles are fluctuations in the field, but you need a lot of energy to produce fluctuations large enough to create a Higgs particle.
