I like how the hard part is not the baking, not the mixing, and not even preparing. It’s stacking the ingredients on top of each other.

I made this once during my vocational school day, and I had to admit it was the most exhausting project we ever did in school. And I remember my teacher set high standards for this particular cake, so me and my classmates were all struggling to pass that standard.

Opera cake is my favourite cake to make, its not really "hard" to make, its just time-consuming.

The only thing that looks hard is getting the ganache just right.
3 hours isn't a whole lot. I've spent upwards of 100 hours on a single wedding cake that could feed 600 people. Homemade cake and gallons of homemade vanilla custard Swiss meringue buttercream. Plus multiple flavors and multiple fillings. It took 3 days alone to decorate. About 2 hours just to set up correctly and set up the fountain and staircases plus all the other components. And I am a home baker. No fancy anything and no equipment to make it quicker or easier.
I also made homemade lemon curd which take take about an hour for the amount I had to make. Plus I used a channel knife to cut the lemon peel into strips, candied the peel and rolled it around chopsticks to make curls before letting it dry and coating in sugar.
Oh and I did I mention that the cake started melting sometime during the reception because they wanted me to set up the cake by a window on a sunny day even though I told them it's not a good idea. I spent about 2 hours running back and forth trying to fix the cake while getting the other stuff together to get ready to serve it.

So it's like oh 3 hours?!😂😂 I'll take it! I'm gonna add this to my repertoire

Thank you for detailing this! I don't think a lot of people realize how much work goes into making a delicious dessert. I made this in culinary school. We had a chef fly from France to teach us. I can proudly say that mine came out really well. I know that because he told me so and that praise stayed with me. I brought it to work the next day where our most grumpy boss ate almost the entire thing and had the biggest smile on his face the whole day. He couldn't stop telling me how great it was. It was one of those core moments for me where I realized how eating something delicious can have a powerful affect on a person. It can really brighten someone's day. To me, food is it just something to be sustenance to the body but rather an experience for the soul. And that's why I became a pastry chef. 👩‍🍳❤️

Tip: When you pour the hot cream over the chocolate for ganache, let it sit a few minutes before stirring. Improves texture and consistency.

Opera cake really isn’t hard it just requires patience, you cant really mess it up unless you try to rush the process.

From scratch baklava is far harder, takes a real special person to sit down and hand roll hundreds of layers of pastry dough transparently thin while applying butter between each layer.

We make opera cakes weekly at work to be cut into mini cakes. We use our honey cake layers for the sponge instead, and it’s good.

I remember making these in school with various other petite gateaux which was absolutely delicious but insanely difficult. I’d love to do that again
