Opera Cake Recipe - a rich French dessert, that uses one of the most loved flavor combinations, chocolate and coffee. Opera Cake is consisting of layers of almond sponge cake soaked in coffee syrup, filled with coffee buttercream and chocolate ganache and topped with chocolate glaze. For an elegant finish its name is written on top of each Opera cake slice and is decorated with gold leaf.

Ingredients
Makes about 10 servings

Joconde (Almond Sponge Cake)
5 eggs, room temperature
5 oz (140g) ground almonds (almond flour)
5 oz (140g) powdered sugar
1/4 cup (30g) flour
2 tbsp (30g) butter, melted
5 egg whites
2 tbsp (30g) sugar
1/4 tsp (1g) salt

Coffee Syrup
2/3 cup (160ml) water
1/2 cup (100g) sugar
3 tsp (6g) instant coffee

Chocolate Croustillant
2.5 oz (70g) semisweet chocolate
2.5 oz (70g) Paillette Feuilletine
Chocolate Ganache
5.5 oz (160g) semisweet chocolate
2/3 cup (160g) whipping cream

Coffee Butercream
5 egg yolks, room temperature
3/4 cup (150g) sugar
3 tbsp (45ml) water
2 tsp (4g) instant coffee
1 1/4 cup (280g) butter, softened

Chocolate Glaze
7 oz (200g) semisweet chocolate
2 tbsp (30ml) canola oil

I made this cake for my MILs birthday and she loved it. Everyone did. That coffee buttercream is so heavenly too. I almost lost my marbles with the process of making this and it definitely wasn't as serene as hers, my kitchen looked like a hurricane had passed afterwards 🤣.

I made this recipe recently and it was so delicious! The coffee buttercream was heavenly and everything balanced each other out to provide a coffee flavored dessert! It took all day to make but was worth it!
Here are some tips that I think are useful to anyone trying to make this:
- The egg yolks in the coffee buttercream are completely safe. I was skeptical at first, but it is safe to eat since the egg ‘cooks’ from the addition of the hot syrup.
- Make sure to grease both the pans that you use AND the parchment paper or else the sponge cake with stick and you’ll have a mess.
- I would half the recipe for the coffee syrup since I had a lot of leftover but it’s your choice.
- I didn’t have the Pailleté Feuilletine, so I used crushed Corn Flake cereal instead and it worked perfectly. You can barely tell that it’s cereal in the final product!
- Heating up the knife and wiping it clean before each cut gives really nice pieces!

I made this opera cake recipe for a dessert auction a couple months back. It sold for $400! A lot of people loved how good the cake smelled and the description I gave.

Im making this step by step, and not in one day. I dont like to stress myself with too many things to do at once so today i made the coffee buttercream, and the coffee syrup. Tomorrow will be the joconde sponge and chocolate ganache. It feels so much easier this way. Oh and btw the coffee buttercream tastes soooo good. Wayyyy tastier than American buttercream. I was sceptical cz it has egg yolks but it's actually amazingg

I finally made this cake, I had been thinking about it for quite some time. It is a rather long process, but well worth it. If I knew how, I would have sang opera after eating the cake. Thank you. I will be making it again, I love this cake.

I made this for my mother's birthday, and it was a hit!!! The cake was sweet but not cloyingly so, the coffee made it bearable for my family members who's not a big fan of sticky sweet desserts. Thankyou for the recipe!!!
