Just in case you still can't turn game mode make sure your HDR is off.

I have my pc connected to my tv via Steam Link wirelessly. But Samsungs feature for game mode only allows for hdmi-connected units to enable it. Is there a way to bypass that?

For me game mode only works with 1080p so on your Xbox go to settings - general - tv & display options and force 1080p. After that game mode isn't greyed out anymore
