Creamy French Lentils with Mushrooms & Kale

A super filling and delicious vegan dinner recipe. This creamy French lentils with mushrooms and kale is great for all types of eaters. A flavourful base with 10 core ingredients total comes together so simply! Shallots, garlic, thyme, white wine, tamari, and vegetable stock form our base. The mushrooms add that earthy umami flavour, lentils pack this recipe with protein, and the kale is a nice touch of green.

First we cook our French lentils ahead of time. Then we move to the sautéing of shallots, garlic, and thyme. Once those are nice and soft, the mushrooms are added. Mushrooms get sautéed until tender and golden. We season everything up liberally with salt and pepper before adding the lentils back in along with vegetable stock and non-dairy milk. From here, half of the stew is blended and added back into the pot to make it extra creamy. Chopped kale is wilted into the stew at the end. I recommend serving this thick and creamy stew with some crusty bread on the side.
