T-bone steak cooks really quickly in Roccbox. The heat differential between the front and back of the oven means we can char the fat on the sirloin, whilst cooking the fillet side more gently at the front of the oven. In Minnesota we call that steak thickness Minnesota Carpaccio LOL.

Correct me if I’m wrong but I think a Tbone is tenderloin (filet) and a strip loin (New York strip). Sirloin is a different cheaper cut.

Great Video ! I have just bought a cast iron pan so hopefully this will do the job. I love this oven and we have done so many garlic breads and pizzas on it over the last 2 months.

This is unrelated, but if you don't ask you won't know. What are the chances of releasing a tutorial on cooking picanha using a roccbox? Is this even possible?

Grill over an open flame please. Preferably charcoal.

We need a quantitative measure of how much dry aging is enough. I naively assume the benefits of doing so diminish over time, possible logarithmically.
