Airfried Peri Peri Chicken

A succulent and flavorful twist on a classic dish! Instead of grilling, let's use the airfryer! The air fryer works its magic by circulating hot air around the chicken, resulting in a crispy exterior that yields to juicy, tender meat within.

Ingredients:
4 pcs chicken qtr leg

Wet Brine:
1 ½ cup water
½ tsp salt
½ tsp sugar
2 bay leaves

Marinade:
1 onion
1 red bell pepper (large size)
4 garlic cloves
2 chilis
1 tbsp parsley leaves
¼ cup vinegar (or red wine vinegar)
⅓ cup olive oil
½ tsp dried oregano
½ tsp dried rosemary (or fresh)
¼ tsp salt
¼ tsp black pepper
1 tsp paprika powder (or smoked paprika)
1 tsp sugar
1 tbsp lemon juice

Procedure:
1.) Brine the chicken by combining water, sugar, and salt in a bowl. Mix to dissolve salt and sugar then add the bay leaves. Soak the chicken, cover and refrigerate overnight or 24 hours.
2.) After 24 hours, remove from the fridge to let it reach room temp then prepare the marinade. 3.) In a food processor, add onion, red bell pepper, garlic, chilis, parsley, vinegar or red wine vinegar, olive oil, dried oregano, rosemary, black pepper, salt, sugar, paprika powder and lemon juice.
4.) Pulse until you get a smooth texture. Transfer to a pot or pan on medium heat, add bay leaves cover and let it simmer for 20 mins. Turn off heat and let it cool down to room temp.
5.) Remove the brine of the chicken. Score the chicken and add the marinade. Marinate and refrigerate it for at least 3 hours.
6.) Remove from the fridge for at least 30 mins before airfrying to help it cook faster. Air Fry it for 25 mins 180°C (22 mins skin side down then 3 mins on the other side). Enjoy!
