Garlic Smashed Potatoes | Delish

The secret is in the cheese! So don't mash your potatoes, smash them!

DIRECTIONS
1. Preheat oven to 425 degrees F.

2. Add potatoes to a large pot. Cover with water and add a generous pinch of salt. Bring water to a boil and simmer the potatoes until tender, about 15 minutes. Drain and let sit until cool enough to handle.

3. On a large rimmed baking sheet, add potatoes. Toss with melted butter, garlic and thyme. Using the end of a small glass or major jar, press down on the potatoes to smash them into a flat patty. Season each smashed potato with salt and pepper, then sprinkle Parmesan on top.

4. Bake until the bottoms of the potatoes are beginning to crisp and the Parmesan is golden brown, about 25 minutes.

5. Serve warm.

INGREDIENTS
1 lb. baby Yukon potatoes
2 cloves garlic, minced
1 tsp. thyme
4 tbsp. butter, melted
kosher salt
Freshly ground black pepper
1/2 c. grated Parmesan

Smashed potatoes are a great thing... however the directions for this one are horrible. If you use butter instead of oil, then bake it at 425 for a half hour, there will more than likely be smoking issues. And the garlic is gonna burn and be really bitter.... you can see how dark it is after it has baked. Garlic should NEVER be allowed to get that dark.

The best way to do that would be to oil the potatoes lightly before baking, then drizzle over a garlic butter after they come out of the oven.

You’re better off adding the garlic on the potatoes after you’ve smashed them, because otherwise they’re on your tray instead of being on the potatoes
