The warm spices in these cookies are perfect for the holidays. The flavor reminds me so much of “Belizean Bulla”. The fresh ginger in these cookies just takes it to another level. They are so simple and easy to make.

👩🏻‍🍳 SOFT GINGER COOKIES

1/3 cup shortening
1/2 cup white sugar
1 egg
1/2 cup molasses
1/3 cup water
2 cups all purpose flour
2 tbs grated fresh ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground cinnamon

Bake at 400 F or 204 C for 9 minutes

Your cookies are the best. I used olive oil & they came out great. Next I will make them using almond flour.

Since visiting Colonial Williamsburg, I have been looking for a puffy, cake-like ginger cookie recipe! Your final product is what I am looking for. Thank you. Now to adapt it to be gluten free for my family. Have you ever creamed the shortening and sugar before adding the wet ingredients? Or, do you find the pieces of shortening floating after mixing with the wet are part of what make your cookie shape?

Hi, just to clarify - is the baking soda you mention, plain bicarbonate of soda, or baking powder (a leavening combination of bicarbonate of soda and tartaric acid)? Cheers

I've been looking for a recipe that uses fresh ginger and definitely this is it, I've only tasted the batter as mine is in the refrigerator for an hour but the batter taste excellent, can't wait to bake them, the fresh ginger definitely give an out of this world flavour. I'd like to see you do the bulla recipe and also I'm wondering if this batter can be used to make a ginger cake?
