This is a egg soufflé cake, that is purely made of eggs. So no flour is needed! But the trick is the eggs need to be whisked right to get the fluffy soufflé to rise!

Why do you need to separate egg yolk & white?
The reason why you don't want to spill egg yolk into the egg white is because egg whites are made of protein while egg yolk are made of fat. When whisking egg whites air pockets are formed and it creates a protection layer around the air pockets. However if there is fat present, the layer of protection is not formed properly. Hence the air pockets forming are not at it's peak. This can cause the souffle cake to collapse or not rise fully.

1 tsp vanilla essence
1 tsp lemon / lime

Can i replace cheese with anything else that is lower in calories. Or can i just no use cheese at all
