I'm new to pedals so I've got zero background here but... I really loved the sound of the Soul Food, the OCD, and the Blues Driver. I'm seriously thinking of getting the Soul Food as my first pedal.

The correct answer to the question in your title is all of them. A great overdrive pedal that doesn't cost a lot of money is the TC Electronics Mojomojo. It's just as good as anything you demoed in your video and can be purchased in the $40-$50 price range.

Looking to start a pedalboard for an assortment of bluesy stuff, 70-80s rock, and a bit of newer stuff...not into harder stuff... can't decide if I should buy a tuner, 2-3 drives(looking at MXR Sugar Drive, EHX Soul Food, TS mini, and a Crayon or something...), Hall of Fame 2/Oceans11, Flashback 2, Phase 95, Ibanez mini chorus, and a ditto looper...(not all at once obviously)...along with cables, board, power, etc...
OR....a Headrush Gigboard....kinda leaning to the multi-effects and then maybe add specific single pedals later?
Advice would be most appreciated...

Hi Nate and Staff, New to Electric Guitar.... Goals: to play John Mayers, "slow dancing in a burning room", and "Gravity", at least to begin with... 
BUT, What about Pedals and Gear? I need your help in getting together a pedal board, and ( yes I am trying to keep the cost low as possible, thank you). I have watched what videos you have on Pedals, boards and so on.... But, it just leaves me still asking questions...
So, heres my situation.. Gear; I have a 2019 American Fender Professional, paired with the Fender Blues Deluxe. Since I highly value your opinion, I need your help in making this happen.

I dont't see much difference between any of those pedals - at least how you did set them up, however i have Blues driver and OCT overdrive that do very good job for me.
