ARUGULA PESTO PASTA- THICK & CREAMY | QUICK & EASY MEAL

Full Recipe:

I love a good thick garlicky pesto, I wanted to share this with you. The best pasta in my opinion to use with pesto is rotini, I feel the pesto sticks to it better and covers all of it.

Ingredients:
- 1/2 cup of a mix of walnuts, pecans and almonds
- 4 garlic cloves
- 2 cups arugula
- 1 cup of parmigiano chunks
- 1 pack of rotini pasta
- 1 cup of basil leaves
- 1/2 tsp salt
- 1 + 1/2 cups of olive oil

Steps:
- Put water to boil, add salt once its boiling, then add pasta
- While the pasta is cooking, blend together the basil, arugula, parmigiano chunks, garlic, mixed nuts, pepper salt and 1 cup of olive oil
- Add 1/4 cup of olive oil and blend again
- Get 1/3 cup of pasta water and blend the pesto for the last time
- Drain pasta once ready, add 1/4 of olive oil and mix
- Add the pesto sauce and slowly mix
- Lastly add 1/4 cup of olive oil and 1/2 cup of tap water
- Once throughly mixed, serve and enjoy
