Anyone saying there's too many coats for applying a SMOOTH finish coating, regardless of what said product is, has clearly never been a painter or finisher. Whether it's Venetian Plaster, Stucco, Level 5 finish over drywall, etc., multiple coats will only results in a smoother finished product when all is said and done. This is standard industry practice for smooth finishes across the aisle. Otherwise, you end up with deflection on an uneven wall (especially noticeable in critical light -- even more so if the finished surface has any sort of gloss). Do me a favor: Make a mock-up of Dryvit's Freestyle or Lymestone finishes with only one coat. Then, make another mock-up with two coats. The difference is night and day, and the result is much cleaner and smoother. This is not the fault of the products; it's the expectation of any professional applicator.
