Night before: Slather in olive oil, bake for 30 mins 375, let cool. Cut, seed and cube much softer and easier 😊

To desolve the gelitine, put it in a cup with just a little water to cover the gelitine. Give it a little stir and let it sit for 5 min for the gelitine to "bloom" and become spongy. Then microwave it 10 or 20 seconds to melt. Then pour that into your hot liquid and stir. Vwala! 😁

I wonder if you could cook the squash in the oven BEFORE trying to cut it. That's how I cook Spaghetti Squash, WHOLE, no cutting until after done, makes it MUCH EASIER! Hope this helps! Hello from N.E. Texas!

Microwave tithe squash before you peel for a 1-2 minutes it will make it easier to peel.

Butternut squash soup.... cut squash in half roast for 1 hour seasoned with cinnamon, let cool saute a small white onion in soup pot add chicken stock then add squash and blend with stick blender season to taste. you can add a half cup of heavy cream if you think it needs it

I do not peel the skin off. I use my new pressure cooker set on steam vegetables for 8-10 minutes. Wow is it sweet and soft enough to eat. I watch your channel for its entertainment value. Thanks for being transparent about your collective process.

As others have said, there is no need to cut or peel the squash. I place a squash (butternut, pumpkin, acorn, etc. ) on a silicone or foil lined baking sheet, poke with a knife a few times then roast at 350° for about an hour or until soft. Let cool, cut open (the skin is very soft at this point) scoop out seeds, then scoop out soft flesh and purée. Super simple! For pumpkin, I also clean the seeds off, soak in salt water overnight, drain, then roast until fully dry. Eat shell and all. So yummy! Going to be trying both of these for Thanksgiving!

Oh my goodness that casserole looks good. I think the cranberry jelly might have worked better if you left the cranberries in and mixed it with an immersion blender.

Hey sweetie, I make my Keto sweet potato casserole using butternut that’s been in a steamer. The peeling falls off of it and you don’t have to blend it very much at all. Get yourself a sunbeam rice and vegetable steamer! Or any veggie steamer! I steam my veggies and then do what needs to be done with them. If you want to just lightly steam veggies then sautéed them it cuts down the sauté time. Just a thought.

I know this is an older video but I had to tell you how much I enjoyed it. Y'all are so fun. Tip: when you cut up larger squash like butternut or spaghetti if you put the whole squash in the microwave for 5 to 10 min it makes it so much easier to cut.

I am a lazy cook. I make the cranberry sauce with sweetener, orange juice, orange zest and then cook cranberries but don't "jell" it. I have also cooked the berries and mixed it in strawberry Jell-O. My husband wouldn't eat cauliflower (although I love it) so I would just cube the squash bake it, smush it with a fork after adding butter, sweetener, and cinnamon or pumpkin pie spice, then top it with the nuts and bake it until crispy. It's nice to see other methods of making these traditional Thanksgiving dishes and I'm sure I'll use them at some point. This is the second time I've watched this video. Thanks for doing this.

I made this keto sweet potato casserole last Christmas and let me say ... it is excellent! It tastes exactly like sweet potato casserole should taste! That's my favorite casserole at the holidays and I had missed it, but I was so freaking happy when I tasted this I cannot believe that butternut squash and mashed cauliflower together would taste like sweet potato but they do! Absolutely one of my favorite holiday keto recipes ever!!! ❤️ ❤️ ❤️. ( to make it easier, I just buy cubed raw butternut squash from Trader Joe's... so much easier than getting the whole thing and doing it yourself) 😃😃😃

I made this yesterday for 2024 Thanksgiving. It was delicious.🤗 Different from sweet potatoes but for the low carb count, definitely worth it. I bought pre cubed butternut squash and cauliflower florets to simplify prep. I put ChocZero Mini Marshmallows (which I learned about from your channel🤩) on top of pecan topping and baked for the last 5 minutes. The marshmallows puffed up and tasted just like regular marshmallows. Got a bit too brown so next time, I'll reduce the heat to 350* and 5 minutes for marshmallows. Thank you for giving me a new holiday tradition.

So glad I caught this my niece has been diagnosed as diabetic, and is taking insulin, and I am back home my low-carb so these recipes are definitely going on the list!😄
