INGREDIENTS
• 7-9 organic lemons, peeled into thin strips.
• 750 ml (3 cups) vodka or rum (100 proof or higher preferred)

*For a sweeter liqueur, increase the simple syrup to 360 ml (1.5 cups)

DIRECTIONS
1. Thoroughly wash 7-9 lemons. Peel into thin strips with minimal pith (the white part of the lemon). Set aside lemons for later use.
2. Add peels into a resealable glass jar, followed by vodka or rum. Stir and seal jar.
3. Store jar in a cool, dark location such as a cupboard for seven to fourteen** days. Shake daily.
4. After steeping for the desired number of days, pour and strain liquid into a pitcher.
5. Add the simple syrup (or keto simple syrup) and stir to blend.
6. Pour the liqueur into a swing top glass bottle or any resealable container.

**Steeping for fourteen days will allow a more intense lemon flavor to develop.

Can I use citrons instead of lemons? Is is done the same way?

An upgrade is to add juice of 2 lemons and store in the freezer.
