Organic doesn't mean no pesticides. They still use pesticides on organic lemons and the peels retain them, even when rinsed. When you use them to make limoncello, you concentrate those pesticides. In the end, it's best to use lemons from a tree in someone's backyard, that you know are 100% organic and contain zero pesticides. Also, from all the Italian recipes I've seen, you generally let the peels steep for three weeks to a month.
