Here’s what you’ll need:
5 chicken quarters
3 tablespoon all purpose seasoning
1 tablespoon vegetable oil
2 tablespoon jerk seasoning, or to taste
1 medium onion, sliced up
3 stalks scallions, chopped up
6 sprig fresh thyme, chipped up
3 garlic cloves, finely chopped
12 Pimento seeds
8 cloves
black pepper
2 teaspoon salt
4 bay leaves
1 Lemon & cold water to rinse chicken
1/4 cup Red Stripe Beer
Recipe notes:
Tbsp = tablespoon
Tsp = teaspoon
