How to Cook Ghanaian beef stew for beginners

In this video i challenged Kiran to make Ghanaian Beef Stew for the first time EVER!. This is a really easy yet tasty stew that can be paired with a lot of dishes but we paired ours with Waakye (a traditional rice and beans dish)
The result was a nice cooked thick stew. with a very nice smell with a hint of Spice, this is not for the faint hearted.

INGREDIENTS: (Prepare before you start)
• 3 onions, (1 finely chopped)
• 1 frozen ginger cube
• 1 frozen garlic cube
• 6 cloves garlic
• 1 can chopped tomatoes
• Fresh ginger (optional)
• 1 cup vegetable oil
• 1 tsp tomato puree
• ½ green bell pepper
• ½ red bell pepper
• 1-2 red scotch bonnet peppers (depending on your spice tolerance)
• 1.5lb diced beef
• Mchuzi beef seasoning/ any beef seasoning of choice

• 2 cups of water (or enough to make the beef stock)
• Salt (to taste)
• 1 tsp paprika
• 1 tsp ground cumin
• 1 tsp curry powder
• 1 tsp ground coriander
• 3 bay leaves

(Serves 4 people)
1) Chop the onions, one of the onions finely chopped, the other 2 roughly chopped.
2) Add the finely chopped onions, diced beef, frozen garlic/ginger cubes and beef seasoning to the pan and stir until well combined.
3) Add enough water to create a soup like consistency. This will allow the beef to boil and absorb the flavours. Stir and let simmer on medium heat for around 10 minutes. Once cooked, separate the beef pieces and the remaining beef ‘stock’ to be used later.
4) Stir and add salt (to taste) and leave to simmer for a further 10 minutes.
5) Blend together the cloves of garlic, scotch bonnet pepper, green and red bell peppers and the chopped onion.
6) Add 1 cup of vegetable oil to the pan and fry the pieces of beef until brown.
7) Fry the remaining chopped onion with the oil used to fry the beef. Fry the onion for around 2-3 minutes then add 1 tsp tomato puree.
8) Add the blended mixture to the pan and stir. Leave to simmer on a medium heat for 10 minutes, add the beef stock and stir until well combined. Cover and let simmer for a further 5 minutes.
9) Add the spices, stir and let simmer for 3 minutes.
10) Finally, add the fried beef to the mix and stir. The stew is ready!
