Potatoes O'Brien
This has been our favorite way to preserve potatoes for long term storage until we canned them this year. Potatoes O'Brien can be used as breakfast potatoes, side dishes for dinner, or thrown into you favorite soups and stews. We love the versatility of this make ahead potato dish, straight from the freezer to the pan or oven they go. Hope you enjoyed another idea on preserving your potatoes ❤

My Recipe:

2 Cups cubed potatoes
1/3 cup diced sweet peppers
1/3 cup onion
1 tsp minced garlic
1 tsp salt
1 tsp pepper
2-3 TBSP of oil

Mix together and store in quart sized freezer bags.

Growing up we had a potato farmer across the street, who would let us go into his field after he harvested his crop and we filled my Pop's pickup truck bed with a ton of taters. Mom wanted to learn how to can them but never did it and if course YouTube or the internet didn't exist. So she did it trial by error and figured it out. We had taters all the time. We had very little money so this was a treat.

Thank you for the ingredients list, potatoes O’Brien is not something we are familiar with in the U.K. so I’ll definitely give them a try.

Hello there. I am a senior citizen and get commodities once a month. I have processed the perishables when I see that they may not be eaten by month's end. That canning skill alone has made me able to feed myself as well as others. I got a 10# bag of potatoes in this weeks commodities and I see that while firm, they are getting eyes. Tomorrow I will can O'Brien potatoes. I love them. I made your Red Cabbage back in the summer. You are a good canning teacher. Thank you

That is a great time saver. And it looks great. You could add some beat up eggs and just do a mosh mash or a fratata even. Yumm. 👏🏻💕👏🏻

I was looking for ways to preserve potatoes today and this oldie but goody popped up! I had already dehydrated and canned some, so since I have plenty of onions and bell peppers, this was the obvious choice! Took me a couple of hours to prep, but now I have 7 quart bags in the freezer and a pile in the frying pan! Thanks Rachel! I always seem to find good answers on your channel! ❤️

🌻 I need to make up some of these and freeze for the weekends. I usually spend too much time cutting up when I want them for breakfast. Time is everything especially when I'm not working from home any more in the future!

I make these every year. How I fix them? I cook several pieces of bacon (each cut into four pieces), then put the potatoes O’Brien in and cook until almost done. Then I scramble up some eggs with a fork and pour over - cooking them. Add a generous handful of cheese and I’ve got dinner! Delicious!

So easy! I will give this a try. Also, thank you for a tip in an earlier video about eating outer leaves of cabbage and broccoli. We have so much shade in our very small yard that we don't think they would form much of a head. But I am trying them just to grow to eat the leaves. Gonna try cauliflower for the leaves too. Make use of what you can, right?! I can envision cooking them like Kale and using them in green smoothies. And, like you suggested in the video, using them as wraps.
