Made chillequiles this week but I used my mom’s recipe that uses chiles de arbol . I’m making sure she teaches me our families recipes because my cousins with kids don’t cook and if one of us doesn’t keep the Mexican dishes alive then our next generation will think Taco Bell is real Mexican food 😭

Oh, it’s soooo good! I use dried Chilis and make a sauce that way, a red sauce and I put a little chili D in there for spice. Yum!

He's right about store bought tortilla chips getting soggy FAST. Tried this a few times with no experience and only a vague idea of what the dish is supposed to be and it was...good but soggy 😂 I think I'll stick to store bought chips and just pour the sauce over them on the plate instead of having them in the pan

Look nice. No need for lime because green sauce is already acidic

Dunk it with cream drizzle with cheese! Then add heaps of salt and lime. Then add more cream at top and more cheese! More like fondue than chilaquiles
