This time I am presenting you how to make Polish Bigos. It is Hunter's Stew and it is a traditional Polish dish. It is prepared with sauerkraut and variety of meats.

Ingredients:


1 liter jar of sauerkraut , drained
Half of a fresh green cabbage
Very large onion
400 grams pork
200 grams of sausage
200 grams smoked bacon
Bay leaf
Salt and pepper
Around 5 cups of water
1 cup of red dry wine (250ml)
Instructions:

Place dried mushrooms in a medium bowl. Pour over boiling water and let steep for 30 minutes or until mushrooms have softened. Set aside.
Chop the fresh cabbage and onion and transfer into a large pot, add sauerkraut.
Cut the prunes in half and chop all your meats into 1/2 in cubes. If your mushrooms are in big pieces chop them as well.
Sauté bacon until fat is melted and remove from the pan keeping drippings. Sauté sausage and then the pork separately but on the same pan.
Transfer meet to the pot with the cabbage, add bay leaf, prunes and mushrooms together with their soaking liquid.
Mix well and bring to a boil over medium heat. Lower heat to low and simmer covered for 2 1/2 hours, stirring occasionally and adding water if needed, to prevent burning.
After 1 1/2 hour, check for seasoning and add salt and pepper if needed (remember that sauerkraut and smoked meats are salty already).
Add wine and stir. Simmer for another 30 min uncovered.
When ready to serve, remove bay leaf before serving.
Accompany with fresh crusty bread or whole, peeled and boiled potatoes.
Bigos is best served the next day.

My son and I just returned from a trip to Poland last week. Tried your Bigos recipe last night. He raved about it! Trying the Zurek tonight. Got the sour rye starter (#84) started four days ago. We discovered Zurek on our trip and it's our new favorite soup!! Thanks for the recipes!

My dad always made this and it was a favorite of my childhood, even though I was a famously picky eater. I went to Poland several years ago to see the town of my grandfather's birth. My hosts asked if there was anything else I wished to do and I said - I want some Bigos! They laughed and said - that's peasant food! But they took me to a place that had lots of long tables like an old prison lunchroom, ha. At the end of the large room, sturdy women were ladling out Bigos into bowls from big pots and serving it to the locals. It was amazing - far better than my dad's. I must try your recipe. I fell in love with Bigos first time I tried it. Married into a Polish family. I decided I had to make some for myself and used your recipe; now at family get-togethers, my Polish inlaws request that *I* make the bigos 😀

Made a batch of bigos yesterday, and then another one today because the first pot I made disappeared! :-) Compared many recipes for traditional Polish dishes, as I do with any other type of international cuisine. Differed slightly in that I used a six ounce can of tomato paste, added directly to the cubed, boneless pork sirloin steak I browned first with a large diced onion. Deglazed with a dry red wine, then added my parboiled cabbage with dried porcini and bay leaf, partially cooked sauerkraut with finely diced bacon, chopped apple and whole allspice, kielbasa and prunes. Smacznego!!

Hi, for my work, I travel a lot to Poland (Wilkopolski). The first dish I adopted was Bigosh. During the years, I learned that everybody has an own recipe. This is the first time I see red wine used for adding a little sour. I only knew the use of tomatoes or apples to add some sour.
In the area of Poland that I visit, they also add Majoram or Thyme, Yellow mustard seeds and Allspice. I guess it does not matter that much and it is up to your taste. Thank you for sharing.
