Considering this was before cgi, the makers of this show did a great job using the tech of the time, archive footage, older movie footage, and simple effects, clever edits to create these dogfights.
In fact in the 4th ( Canadian made ) season of the show, they didn’t even have the original helicopter, but they used a stand in / a mock up shell and the inner cockpit. Every shot of Airwolf flying was reused footage from season 1-3.

That's a weird Mig 15. If it was a real 1985 Mig, it would have been the Mig 25, which outstanding speed of Mach 2.25, airwolf just wouldn't be able to catch!!!
