In this video I'll show how to make a simple and delicious homemade chili Frito pie. Homemade chili filled with Fritos corn chips, onions and cheese.

Shopping List:
1 lb. Ground chuck or (ground turkey for a little healthier version)
1 small sweet onion, diced
1 small red bell pepper, diced
3 garlic cloves, minced
2 tbs. cooking oil
2 tbs. chili powder
2 tsp. ground cumin
1 tsp. dried oregano
1/4 tsp. cayenne pepper
1 tsp. Kosher salt
1 1/4 cups chicken broth or stock
1 28 ounce can of crushed or diced tomatoes. Rotel will work as well.
1 15 ounce can red kidney beans, drained
1 15 ounce can sweet corn, drained
Frito corn chips
Shredded cheddar cheese
Chives

Directions:
Add oil to a dutch oven over medium high heat. Add the onions and the red peppers and saute for 5-7 minutes. Add the garlic the last 30 secs. Stir frequently.
Add the ground beef or turkey and cook until all the pink is cooked out. Drain of grease then return to pot.
Add in the spices and stir until well incorporated.
Add in the tomatoes (or Rotel), broth, beans and corn. Stir well.
Bring to a boil then reduce heat and simmer for about 1 to 1 1/2 hours until thickened slightly. Stirring occasionally.
Salt and pepper to taste
Place a layer of chili to the bottom of a cast iron skillet followed by Fritos and cheese. Repeat this layering for two or three layers.
Bake in the oven at 350 degrees for 20-25 minutes.
Garnish with cheese, onions, chives and cilantro and more Fritos if you like.

Richard my friend, great recipe, i like it. A very popular snack around here is called a walking taco. Buy some snack size fritos in a bag, save some of your chili on the side before you add fritos & cheese to your pie for supper, put the container of side chili in the fridge, & when you want a snack, open a snack pack, nuke a little side chili( around here you know it is cincinnati chili even in ky., & indiana) pour over fritos in the snack bag, add shredded cheddar & they give you a plastic spork to eat with( half spoon/half fork), you eat them walking around or sitting at ball games or at home. Talk later pal, p.s. i told you i can never have to many chili recipes, lol.
