It's hard because most cook's knives aren't sharp enough or not evenly sharp along the length of the blade, so usually the start goes well, but as you move along, the cucumber starts to catch on the dull parts of the blade, which causes the knife to dig up or down, breaking the sheet or making it lopsided (thicker at one end). Once your knife is evenly sharp, it's much more easy; unrelated, but it's also why spiral peeling is easier with a paring knife, smaller blade length, means it's probably equally sharp at all points of the blade.

its a trick primarily used in Japan, and for a good reason, that being they traditionally use single edge blades. if you get yourself a traditional Japanese single edged knife you will have a much easier time learning this trick.

😩 The cucumber dangle 😂 That is such a great idea to use it for sushi! I’m one who doesn’t like seaweed (don’t kill me) but this seems like a great alternative to keep the veggies tucked in 👍 Will try this!
