Cinnamon roll RECIPE
Dough:
100ml milk
60gr. butter,
6 tbsp sugar,
100 ml warm milk
7 gr. active yeast,
1 tsp sugar, a pinch of salt,
2 eggs,
600gr. flour
Heat the first portion of milk, butter and sugar in a saucepan. Until the butter dissolves. Remove from heat and cool. At this time, pour warm milk over the yeast, add a spoonful of sugar. Stir and leave for 10 minutes. until bubbles appear. Add the yeast mixture to the butter mixture, eggs and salt there. Mix. Add sifted flour and knead the dough. Put the dough in a bowl greased with vegetable oil, cover with a damp towel and put in a warm place for 40 minutes.

Tips for making the best cinnamon rolls:
Don’t overheat your milk. It should be between 105-115 degrees F. Anything hotter is likely to kill the yeast, which means the cinnamon rolls will not rise. A simple tip is to dip your finger in the milk — it should feel warm similar to warm bath water but not HOT.

Filling:
butter - 60 gr (melted),
brown sugar - 150 gr,
cinnamon - 1.5 tsp,
chopped walnuts
Mix sugar, cinnamon with melted butter. Roll out the dough on a floured surface, into a large rectangle, 5 mm thick. Lubricate liberally with an butter mixture, add nuts. Roll into a large roll and cut into buns. About 3-4 cm thick. Transfer to a baking sheet lined with parchment paper at a distance of 1-2 cm from each other. Leave on for 20 minutes. Bake in a well-heated 180 * oven, about 20-25 minutes, until just slightly golden brown on the edge.
Ingredients for 450 g of finished caramel:
sugar 200 gr.
cream 33% 200 ml.
butter 150 gr.
sea salt 2/3 tsp
Recipe:
Put sugar in a saucepan, pour in a couple of tablespoons of water.
We put on medium heat and cook until amber, but do not overdo it.
Move the stewpan off the heat and pour in the well-warmed cream, stirring constantly with a whisk. It is better to pour in in parts, each time waiting for the active bubbling to subside a little.
We return to the fire and cook for a couple of minutes. Then remove and add the diced butter again. Stir until it dissolves.
Add salt, mix and transfer to a jug.
🫖 Vitamin tea with citrus and thyme
2-3 tsp Earl Gray tea
1 lemon
1 orange
100 gr sea buckthorn
1-2 tsp grated ginger root
1 tsp cloves
Thyme several branches
1 liter of boiling water
Add tea leaves to the teapot, cut lemon and orange, defrost and crush sea buckthorn, finely grate ginger, add cloves and thyme, pour boiling water over and let it brew for 5-10 minutes. Pour the tea into cups and add honey. Enjoy your tea!
