My biggest issue with the inventory system (and I suppose it's somewhat reasonable why for mechanically powerful items like ender pearls and totems of undying) is the fact that you can hold 64 cubic meters of gold in the palm of your hand, but God-forbid you fit over 16 snowballs or a single bowl of soup in the same space.

9:33 I actually love the idea of the 3 slots for the arrow parts because it opens the door for modular arrow parts. Imagine if instead of a stick, you could use a blaze rod to mimic flame, or a breeze rod to create a wind burst. Then swapping out the tip could have effects too, like a prismarine shard making it move through water like a trident, or an echo shard making it fire like the warden sonic blast, going through blocks. The feather could be replaced with a firework or gunpowder (something like that, anyway) to make it have higher velocity, or a phantom membrane to make it fly without gravity (but for a limited duration).

Just like tipped arrows, none of them would work with infinity, and changing the components would likely affect their damage if not used in the correct situation.

The irony of the thirst bar is you can take it even further by mimicking real life. Oceans--and some lakes/seas--are all saltwater, which will NOT help your thirst at all and make you even more thirsty. If you wanted, you could have it so water from all oceans (in Minecraft) will actually DRAIN the thirst bar, so the only way to actually satiate thirst is through small water pools and rivers.

Also I think there's an irl way to have salt water be drinkable but why bother when you can just drink from little water pools and rivers in Minecraft? 10/10

I do not understand why people always ask for a thirst bar... There are people who literally complain about the hunger bar for whatever reason. A thirst bar wouldn't add anything other than tedium.

for the vertical slabs i strongly reccommend the mod "additional placements" It even adds more funky placement options for stairs and it supports almost all slabs/stairs from other mods automatically!
