Add a tbsp of semola to the water to boil before you add the frozen pasta. The semola kicks in and adds the required starch. P.S love your channel!

My nonna often made homemade ravioli. We always had a few of them in a bowl with a splash of my nonno’s red wine as a first course (even the kids) then the rest of the ravs were served with tomato sauce.

Nice one, for real. I see you got that 00 flour from Pasta Fresca, who have been my go to pasta etc. guys in Brooklyn for many years (I'm assuming it's from them, unless somebody else uses the same name). All of the four dishes look great, but I'd be partial to the pistachio pesto with the mortadell' tortoloni and the final passata for sure.

Hey dude, fellow NYer and Italian here. I love your videos, I love your recipes, I love everything! But I noticed all your recent vids are in 720p, did I miss something here? I mean I know the most important thing are the stories and recipes here but I do love seeing your work in HD, your cinematography, your lighting and the FOOD. I feel it's a disservice to your art to be presented in such a low resolution. Anyway not trying to be a troll, just wondering. Either way I'll always be a fan, subscriber and student. Peace!
