Ceviche is a South American dish, we don't use jalapeños, but only a bit of shaved rocoto on top because its soooo spicy. Definitely red onions and no garlic. What you're missing is the leche de tigre, the essential part of ceviche. It isn't just lemon juice. I hope you can make a traditional ceviche with fish and leche de tigre. I really like you channel.
