I have the sauerkraut with lemon and mint and fennel on the counter
The week ended on Saturday, but my husband says it needs more time....
It is crunchy but he feels it is not sour I reminded him that with the lemon and fennel it would be different from the kraut we are used to ..
Letting it sit for a few more

And today I took a nibble of the carrot sticks that I started on Friday .... Just a lil jar...
It's so much

and in my third jar is a mix of carrots/radishes/and apples with fennel seeds ... the apples are turning a lil blue...
love the taste... these I started on Friday, too.. and I assume we will eat these first, because of the breaking down of the apple chunks

2019 is my year to ferment ... at age 63... *chuckle*
I remember my mother when I was young having big crocks of saurkraut in the kitchen.. with plates on tops and other crocks holding the plates
What I am making is just right for the two of is..

Thank you for the video! If we want to ferment fruits, how can we make sure that the final product is free from alcohol. ie how can we ensure only lacto fermentation occurs and prevent other microorganism from launching an alcoholic fermentation? is adding 2% salt enough?

Are you able to get a longer shelf life by cooking fermented hotsauce, then bottling in sterilized bottles? What would that do to taste?

If my state adds chlorine to the water what will happen? It must kill the lactobacillus. Does it slow down the process or does it stop it all together?

I have a question..
RIght now I have 4 different ferments on my counter
1 - your recipe - with the cucumber skins, dill and cabbage to make pickle kraut
2 - fermenting brussel sprouts
3 - mild kimchi with bok choy
and 4 - romanesco fermenting


Can I put them all in the same corner of my counter....?
they are all with simple brines... nothing too spicy ...
almost the same brine, too
Should I cover them .. to keep them dark ?

Is there a reason why you don't weight the produce/water and calculate how much salt you add to ensure a correct percentage salt brine??

Does adding a bit of vinegar just before putting them in the fridge kill the beneficial bacteria or is it okay to add vinegar?
