So we're supposed to boil beets? Never had that. Is it good?

How about a primer on bile? Still don't understand why "binding" bile is important. My doctor has told me to take bile salts. for fat absorption. Was under the impression that bile was a good thing. MOre confused than ever? A 'Bile for Dummies, ' please.

It is worth mentioning that the interpretation of the data is based on dry matter (DM) and total dietary fibre. So, beets for example, have the lowest %DM relative to total dietary fibre. In reality, we eat beets that have not been dried, which may be cooked with additional water. So the mass of the beat you consume is greater (relative to DM), reducing the total %DM you'd actually consume. If the results were compared based on bile binding per g of sample, it may provide a more real world application for understanding the best food for bile binding ability (which would probably be okra or eggplant relative to higher %DM).

Since we water saute in WFPB cooking, would that be the equivalent of steaming you think?

Nice. I'm a big fan of kale and beats, but only raw kale. Best salad green imo.

beets r very high in protein for a plant
10.8% of their macronutrient make-up iirc according to chronometer
nice to have them be good at other things too

I ALWAYS wondered why I‘m feeling so much better the day after eating beets or blended leafy greens. Now I do. Lol.
Flax and applesauce seem to have the same effect on that.

Why would recycling bile acids be harmful? We evolved to do that...where is the evidence that bile acid recycling actually hurts us? If you get rid of them that is just gonna trigger new synthesis isnt it?
