watch is closer to observe but not see. As see is closer to look to .

reject is closer to disprove but say no is closer to disagree.
set up ==>> create or build up but establish could be an alternative for constructing or forming some kind of association.

The opposition formal/informal supposes that the words are synonyms !!! For example the difference between "see" and "observe" is not a difference of register. They definitely don't have the same signification.
