Tomato Season | Creamy Roasted Tomato Soup | Vegan Recipe

Ingredients for 4 serves:
• 10 Medium Tomatoes
• 2 Medium Red Peppers
• 2 Medium Red Onions
• 7 Garlic Cloves
• Salt
• Black Pepper
• Oregano
• Rosemary
• Basil
• 3 tbsp Olive Oil
Step 1:
Cut the tomatoes, the red peppers, the red onions into medium cubes and add them in a ceramic baking dish together with the garlic cloves. Season with salt, black pepper, oregano, basil and rosemary. Add 3 tbsp of olive oil and mix them well by hiding the onions and the peppers under the tomatoes. This way, you can avoid them burning on top.
Step 2
Bake them at 180 C for 60 minutes until the veggies are well done. Transfer the veggies together with the liquid in a medium saucepan and using a mixer, blend them until creamy. In case the tomatoes were not very juicy, you can add 1 cup of water. Place the saucepan on stove and boil the tomato soup for 10 minutes, stirring occasionally.
