6 jumbo tenders seasoned with garlic & onion powder and paprika.

150ish ml of oil from sun dried tomatoes (8.5oz julienne cut sun dried tomatoes), 1 to 2 tbl spoons of butter in frying pan. Pan fry chicken (slightly underdone if you are going to add it back in to pasta and it will sit hot).

Add back to oil, One whole shallot diced, choice of dried herb (basil, rosemary or thyme, or all the above), chili flakes, paprika, garlic (or onion powder, cant tell), 2 gloves of garlic minced, tbl spoon of tomato paste. Let it toast.

Deglaze with chicken stock, add enough to be level with pasta that is added. Let pasta absorb and cook, covered. Once cooked, add milk (or heavy cream) and the julianne tomatoes, grated parm and spinach.

Easy.

Recipe:
One Pan Chicken Pasta with Sundried Tomatoes and Spinach


Chicken:
1 pound chicken tenders
1/2 tablespoon garlic powder
1/2 tablespoon chicken bouillon seasoning
1/2 tablespoon paprika
1 (8.5 oz) jar julienned sundried tomatoes with Italians herbs in oil
1 tablespoon butter

Pasta:
1 medium shallot, minced
1 tablespoon dried Italian seasoning
1 tablespoon garlic powder
1 tablespoon paprika
1/2 teaspoon red pepper flakes
3 cloves garlic, grated or pressed
1 tablespoon tomato paste
1 (32 ounce) container chicken broth
1 pound bowtie pasta
1 cup half and half
1/2 cup freshly grated Parmesan cheese
1-2 cups baby spinach
4 large fresh basil leaves, chopped


Using a fork, prick each chicken tender about 6-8 times. Place in a bowl and season, to taste, with garlic powder, chicken bouillon seasoning, and paprika. Set aside for about 5 minutes for the seasoning to penetrate.

Drain the oil from the sundried tomatoes, reserving the tomatoes for later, and put about 1-2 tablespoons of the oil in a large skillet along with 1 tablespoon butter. Heat over medium high heat. Once butter has melted, add the chicken tenders (Give the chicken plenty of room to ensure the brown crust forms from adding the seasonings. You may need to do this in 2 batches.) Cook the tenders for about 3-4 minutes per side or until cooked through. Remove from pan and allow to rest about 5 minutes before cutting into bite sized pieces. Set aside.

Return the pan to the burner over medium low heat (note: add a touch more sundried tomato oil if necessary). Add the minced shallots, Italian seasoning, garlic powder, paprika and red pepper flakes along with about 1/2 teaspoon salt. Sauté until onions have softened and have become translucent, about 4 minutes. Add in the garlic and cook for another minute, or until fragrant. Add in the tomato paste, stir, and cook for 2 minutes.

Pour in the chicken broth, scraping up any brown bits on the bottom of the pan. Bring to a simmer, add in the pasta, and stir. Cover and simmer until al dente, about 10-15 minutes, stirring every few minutes.

Once the pasta is al dente, add in the half & half, sun-dried tomatoes, and parmesan. Stir until fully combined.

Add in the spinach, cooked chicken, and basil. Stir until spinach is wilted. Serve immediately and top with more fresh Parmesan cheese and serve immediately.
