I built many of these in the 80s an ran into Insurance company’s not insuring them because not UL approved! They work very good we used a snap disc thermal temp that turned on the back fan when hot and off when cooled off!

I build one 15 years ago still working good. I have Grats and Ash door. Don't need to let fire to go out for cleaning.

Step one for the ceiling would be to staple plastic sheeting to stop air infiltration and keep the heat down in the workspace. Later you can screw white indoor steel panels to the bottom of the trusses. Then you can blow insulation on top later down the road when you have the money
