Lemon Pistachio Checkerboard Cookies

Recipe:
3/4 cup salted butter room temperature
3/4 cup white sugar
1 large egg
1/2 tsp baking powder
2 1/4 cup all purpose flour
Cream butter and sugar together until light and fluffy
Blend in egg
Blend in baking powder and all purpose flour until dough comes together, form into a ball and cut it in half.

To one half blend in:
2 tsp finely grated lemon zest
few drops yellow food colour

To the other half blend in:
few drops green food colour
1/4 cup finely chopped pistachios
1/4 tsp almond extract

Bake at 350 F for approximately 15 minutes until golden on the bottom.

Omg this reminds me of some Mexican sweet bread or I guess it technically is a cookie but it's a triangle with 3 colors, pink, ivory, and brown its sooo good

OH MY GER! You totally reminded me of a recipe I did YEARS ago like this, but they were halves, not checkered, And round. It was orange and cranberry! They were so good, but I totally forgot about them. lol YOU should make them! I just remember the hard part was making the logs into a half cylinders and pressing them together, and rolling in plastic wrap. I almost gave up. LOL
