A few notes:
The geometry can be optimized further. "Lowpoly" doesn't mean lower poly count, it means optimized geometry according to purpose...
The UV is terrible and 4k textures are likely far too high res unless this asset is big enough to have a texel density of 5.12 or 10.24.

Videos like these are the reason game art students fail their assignments.

duuude, this shit with 1024*4 is so useful, i always go to google to find resolution because i cant remember correct amount of pixels, but now i can save minute just by doing it like you. This is why i love to watch random tutorials, you never know when and where you will find something useful

You can bake with only image texture, without plug in principled with normal

I did a tool called Assetgen it does all your steps in one click. Now the addon is not compatible with recent version of Blender.
