I don’t know if it’s the same everywhere. But I live in Corsica (French island near to Sardinia) so us are more « red/orange » that this one. And there is an iodized/ocean taste, but it’s not like oyster (I don’t like oyster personally). And it’s very creamy and in my place it’s also kinda sweet. But very very good.

I have the chance to live on an island n sea urchins are quite rare due to pollution you'll see the smaller one's colour is purple and is quite empty not much texture the bigger ones are found in deep waters so I like to add a very small pinch of salt and pepper n some lemon add a lil of Tabasco amigo it tastes like heaven 😍
