Lemon bars with intense lemon flavor and a buttery shortbread crust. This recipe is so simple, can be made ahead and even frozen.
Lemon squares are very easy to make and very delicious desserts. I particularly appreciate in this dessert the tangy lemon filling combined with a crispy shortbread pastry.
I like my Lemon Squares with a very soft top and looks like a lemony flan, and a crispy bottom, but you can adjust the cooking times to your liking. Hope you enjoy!

Ingredients:
For Dough:
- 150g flour
- Pinch of Salt
- 30g sugar
- 85 g Melted butter
For Filling
- 120ml Lemon juice
- 60g flour( 1/2 cup flour)
- 4 Eggs
- 300g sugar
- 1 Tbsp Lemon zest
Instructions:
1. In a Container, put 150g flour
2. Add 30g Sugar
3. Add a Pinch of salt
3. Add 85g Melted butter
4. Mix the dough with your fingers
5. In a mold Size: 18cm, put parchment paper
6. Sprinkle the dough into your lined pan and press down into a flat layer
7. Bake in preheated oven at 170°C-338 °F for 25 -30 minutes
For filling:
1. In a container, put 4 Eggs
2. Add 1 Tbsp Lemon zest
3. Add 300g Sugar
4. Mix well
5. Add 120ml Lemon juice
6. Mix well
7. Sift 60g Flour
8. Mix well
9. Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake.
10. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.
11. Dust with powdered sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut
12. Sprinkle lemon zest.
