Chicken Cordon Bleu Casserole

1 Package of Chicken Tenderloins (8-10 Uncooked)
1 Cup of Diced Ham
4 Tbsp of Butter
1 ½ Tbsp of All Purpose Flour
2 Cups of Milk
2 Tbsp of Dijon Mustard
1 8oz Package of Swiss Cheese (Shredded)
1 Cup of Panko Bread Crumbs
Salt and pepper to taste.

Layer chicken tenderloin pieces on the bottom of a 9x13 inch baking dish. Salt and pepper chicken to taste. Sprinkle ham over the chicken. Place in 350 degree preheated oven while making cheese sauce.

In medium size saucepan melt butter over medium heat. Add 2 tbsp of the melted butter to the bread crumbs and sprinkle with a pinch of salt. Stir butter into breadcrumbs and set aside. Add flour to remaining butter and whisk until lightly brown and thickened. Slowly add milk whisking the entire time. Cook until thickened and add mustard and cheese. Stir until cheese has completely melted.

Remove chicken and ham from the oven and pour the cheese sauce over the top and create an even layer. Top with bread crumbs. Place back in the oven and bake for approximately 30-40 minutes or until golden brown and bubbly. Remove from oven and allow the casserole to sit for about 10 minutes before serving.

Just what I was looking for. Most of the casserole recipes call for cooked chicken and pasta. Didn't want that, will be making it this week.

Thank you, thank you, thank you for not using packaged shredded cheese. It is so inferior to cheese you grate yourself. Besides, it only takes a few moments to gate the amount of cheese needed for this dish. Your recipe is excellent as is, but I would probably add some chopped parsley and chives to the cheese sauce and/or the breadcrumb topping.
